W really likes eating wraps. She’s says it’s comfort food. Back in the day when I just got to know her, Subway would be the go-to place for grabbing comfort food, not the foot-long sub but the wrap. Until then, I had no idea Subway sold wraps. Curiously enough, I have no idea why we don’t eat wraps very often. In fact, this is probably the first time we’re having wraps together! Maybe it’s because she doesn’t need much comfort when I’m around. Hah.
Well, this recipe takes a wee bit of patience. But it’s so worth the effort! Aside from the usual sauteing mushrooms and frying eggs, you’d have to peel a couple of potatoes… and chop them.. and boil them.. then fry them. Okay, so it’s like a whole bunch of stuff to do first thing in the morning, but it is brunch after all!
So here’s how we did this lovely potato and egg brunch wrap; you’ll need:
(Makes two wraps)
- 2 medium potatoes, one per person
- 4 large white mushrooms, sliced
- 1 handful ham trimmings
- 2 handful fresh spinach and rocket leaves
- 2 eggs
- 2 tortillas
- 0.5 tsp smoked paprika powder
- 1 tsp cajun seasoning powder
- 1 tsp butter
- Salt and pepper
- Set an electric kettle of water away to boil. You can use some of that hot water to make some tea later too. Then peel your potatoes and chop them into small thumb-sized pieces so they cook faster. Boil the potato chunks in a pot, using the hot water you’ve just boiled, just enough to cover the potatoes.
- Saute some sliced mushrooms with a small splash of water, seasoning lightly with salt and pepper. Set aside when done.
- Fry up some eggs sunny-side-up and set aside as well.
- When the potatoes are boiled through (they’re done when you can squash them effortlessly), drain them in a strainer well. Then fry them the pan with butter. Add the paprika and cajun powders, and season accordingly with salt and pepper. Give the potato chunks a little squash here and there with a masher or fork, and fry them till they get start getting crispy on the outside.
- Give your tortillas a 10-second nuke in the microwave and assemble everything together in a nice wrap by piling a little bit of everything on!
No idea why we don’t eat this more often…!
